CRISPY TILAPIA WITH LEMON-ONION RELISH

Yields: 6 Servings

Tilapia seems to be the new fish of choice for most fast food as well as many fine dining restaurants because of its availability, price and quality. It adapts well to any flavor.

Ingredients for Tilapia:
6 (5-ounce) tilapia fillets
¼ cup peanut oil
salt and black pepper to taste
granulated garlic to taste
Creole seasoning to taste
1 lemon, wedged
minced parsley for garnish
Lemon-Onion Relish (see below)

Method for Tilapia:
In a large sauté pan, heat oil over medium heat. Season fish fillets with salt, pepper, granulated garlic and Creole seasoning then add to pan. Cook 10–15 minutes, shaking pan occasionally, but not flipping fish. Bottom of fish should be browned and crunchy and top should be white and opaque. Turn fillets over, cook an additional 30 seconds then remove from heat. Arrange on a serving platter, crisp side up. Top with a squeeze of lemon juice, garnish with parsley and serve alongside Lemon-Onion Relish.

Ingredients for Lemon-Onion Relish:
2 large lemons, peeled, seeded and thinly sliced
1 large red onion, peeled and thinly sliced
2 tbsps peanut oil
¼ cup dry white wine
2 tbsps cider vinegar
1 tbsp molasses
salt and freshly ground black pepper to taste

Method for Lemon-Onion Relish:
In a heavy, medium sauté pan or skillet, heat oil over medium heat. Add onion and sauté 10 minutes or until well browned, stirring frequently. Add wine and deglaze, scraping up any browned bits on bottom of pan. Stir in vinegar and molasses then add lemons to pan. Season with salt and pepper then mix to combine well. Bring to simmer and cook 1 minute. Remove from heat and let stand 1 hour before serving.
